To say that 2020 has been hard is the understatement of the decade. Living through fires, political movements, and a presidential campaign unlike any in my lifetime, all while trying to successfully run a hospitality business in the middle of a global pandemic with mandated stay at home orders and closures and restrictions that require multiple pivots; furloughs, go fund me campaigns and personal tragedies … that is not hard it’s an impossibility.
And yet, we are still here! Trying to make the best, sweetest lemonade we can out of all these lemons thrown at us. And, while looking back is undoubtedly filled with losses … I am also inspired by the wins. The generosity of our community and patrons to help our staff in April after the initial shut down. The support from those who love Nick’s Cove and drove out to get our Curb Side Cocktails and Take-Out as well as those who gracefully accepted our pivot to counter service! The amazing summer and fall weather provided the most beautiful warm days and evenings for dining al fresco! Watching our guests enjoying this beautiful bayside property in a way they had not before with tables located all around our pier, garden and waterfront decks was most definitely a win! Another win is this delicious winter cocktail that you can enjoy in the comfort of your home!


Nick’s Cove Eggnog
1 ¾ oz Gustoso Aged Rum
1 ½ oz cream
¾ oz winter spiced syrup*
Egg
1 dash vanilla extract
Shake all ingredients and double strain into an Irish coffee mug. Garnish with grated nutmeg.
*For winter spiced syrup combine 900 mL water, 1200 grams demerara, 6 cinnamon sticks, 30 allspice berries, and 16 cloves. Bring everything to a boil and steep for a few minutes. Strain everything and bottle.
